spring onions, thinly sliced

large eggs, lightly beaten

A large handful of cilantro, leaves picked and coarsely chopped

  1. Heat the oil in a wok over high heat and add the rice and a little water, stirring to break up any lumps. Sauté for 5min.
  2. Add the spring onions and a little seasoning and cook for 2 minutes.
  3. Push the rice to one side of the wok. Pour the beaten eggs into the empty side of the wok and cook, stirring, until just set.
  4. Mix rice and egg together. Add soy sauce to taste and serve sprinkled with cilantro.
