x 250g sachets of microwave basmati rice
spring onions, thinly sliced
large eggs, lightly beaten
A large handful of cilantro, leaves picked and coarsely chopped

- Heat the oil in a wok over high heat and add the rice and a little water, stirring to break up any lumps. Sauté for 5min.
- Add the spring onions and a little seasoning and cook for 2 minutes.
- Push the rice to one side of the wok. Pour the beaten eggs into the empty side of the wok and cook, stirring, until just set.
- Mix rice and egg together. Add soy sauce to taste and serve sprinkled with cilantro.
